Pero se disfruta a lo largo del a\u00f1o, sobre todo en fiestas familiares.<\/p><p data-start=\"606\" data-end=\"753\">En <span data-start=\"609\" data-end=\"617\">2023<\/span>, el choj\u00edn bataneco fue <span data-start=\"633\" data-end=\"690\">declarado Patrimonio Cultural Intangible de la Naci\u00f3n<\/span>, en reconocimiento a su valor hist\u00f3rico, cultural y culinarik. La palabra choj\u00edn proviene del t\u00e9rmino\u00a0<a href=\"https:\/\/soymigrante.com\/revista\/el-pueblo-kiche-es-heredero-y-continuador-de-la-tradicion-del-popol-vuh\/\">k\u2019iche<\/a>\u2019\u00a0 <i>chijixik o chojin ti\u2019ij<\/i>, que significan \u201casar\u201d o \u201ccarne asada\u201d.<\/p><div><p>La t\u00e9cnica principal del platillo consiste en <strong data-start=\"975\" data-end=\"1041\">asar lentamente la carne sobre ramas del \u00e1rbol de palo de pito<\/strong>, un \u00e1rbol mencionado en el <a href=\"https:\/\/soymigrante.com\/revista\/el-popol-vuh-es-migrante-esta-en-chicago-y-8-datos-que-quiza-no-sabias\/\"><strong data-start=\"1069\" data-end=\"1082\">Popol Vuh<\/strong>, libro sagrado de los mayas<\/a>.\u00a0 de cuya madera se hicieron los primeros hombres y cuyas semillas son utilizadas por los gu\u00edas espirituales o Aj&#8217;quij.\u00a0<\/p><p>El proceso de asar la carne sobre palo de pito se conoce como , y es lo que otorga al platillo su sabor caracter\u00edstico. El chojineado (idealmente un d\u00eda antes)<\/h3><p data-start=\"2283\" data-end=\"2546\">Colocar las <strong data-start=\"2295\" data-end=\"2336\">ramas de palo de pito sobre el asador<\/strong> y, encima de ellas, la carne de res.<br data-start=\"2373\" data-end=\"2376\" \/>Asar a <strong data-start=\"2383\" data-end=\"2431\">fuego bajo durante aproximadamente dos horas<\/strong>, hasta que la carne quede bien dorada y seca.<br data-start=\"2477\" data-end=\"2480\" \/>Este proceso le aporta el sabor ahumado caracter\u00edstico del choj\u00edn. <br \/>Una vez lista, se recomienda <strong data-start=\"2577\" data-end=\"2614\">envolver la carne en papel manila<\/strong>\u00a0o de aluminio y dejarla reposar hasta el d\u00eda siguiente.<\/p><hr data-start=\"2658\" data-end=\"2661\" \/><h3 data-start=\"2663\" data-end=\"2688\">2. Limpieza y cocci\u00f3n<\/h3><p data-start=\"2689\" data-end=\"2706\">Al d\u00eda siguiente:<\/p><ul data-start=\"2707\" data-end=\"2947\"><li data-start=\"2707\" data-end=\"2797\"><p data-start=\"2709\" data-end=\"2797\">Cortar la carne y <strong data-start=\"2727\" data-end=\"2762\">lavarla con agua fresca y lim\u00f3n.\u00a0<\/strong>Colocar la carne en una olla con agua caliente y hervir junto con la <strong data-start=\"2869\" data-end=\"2884\">hierbabuena<\/strong>.
