font-size: 33px; font-weight: bold;\">Preparaci\u00f3n<\/span><\/h2><p data-start=\"958\" data-end=\"1445\">Primero se limpia bien la gallina criolla, retirando el exceso de grasa, y se coloca en una olla grande con los cuatro litros de agua. Se a\u00f1ade la cebolla, los ajos, el apio y un pu\u00f1ado de cilantro, y se cocina a fuego medio-alto hasta que hierva.<\/p><p data-start=\"958\" data-end=\"1445\">En cuanto suelta espuma, se retira con una cuchara. Luego se reduce el fuego y se deja cocinar entre una hora y media y dos horas, hasta que la carne est\u00e9 suave, tomando en cuenta que la gallina criolla es m\u00e1s firme que el pollo comercial. <br \/>Este tiempo se puede reducir utilizando una olla de presi\u00f3n, durante 20 minutos.<\/p><p data-start=\"958\" data-end=\"1445\">Cuando la gallina est\u00e1 casi suave, se incorporan los elotes, las zanahorias y los g\u00fcisquiles. Se deja cocinar unos 10 minutos m\u00e1s y despu\u00e9s se agrega el repollo, el tomate entero y una cebolla.\u00a0\u00a0<\/p><p data-start=\"1694\" data-end=\"1956\">Para darle el toque chap\u00edn, se retira el tomate ya cocido, se aplasta con un tenedor y se agrega nuevamente al caldo para espesarlo de manera natural. Se ajusta la sal y se a\u00f1ade un manojo fresco de hierbabuena justo al final. Se deja hervir unos minutos mal.<\/p><p data-start=\"1958\" data-end=\"2197\">Para servir, se coloca un buen trozo de gallina en cada plato, acompa\u00f1ado de las verduras y suficiente caldo. Se agrega hojas picadas de hierbabuena o enteras, seg\u00fan se guste.<br \/>Se ofrece arroz blanco aparte, <a href=\"https:\/\/soymigrante.com\/revista\/ah-que-delicia-la-bendita-tortilla-guatemalteca\/\">tortillas calientes<\/a>, lim\u00f3n y un chile cobanero o chiltepe para quienes prefieran <a href=\"https:\/\/soymigrante.com\/revista\/chiltepe-el-chile-guatemalteco-que-enciende-los-sabores\/\">un toque picante.<\/a><\/p><p data-start=\"1958\" data-end=\"2197\">Algunos <a href=\"https:\/\/soymigrante.com\/revista\/ah-que-delicia-la-bendita-tortilla-guatemalteca\/\">parten la tortilla en pedacitos<\/a> y tiran al caldo, para complementar el sabor. est\u00e1 demasiado dura, es mejor cocerla en olla de presi\u00f3n durante 10 a 15 minutos. <br \/>Dejar reposar el caldo al menos veinte minutos antes de servir ayuda a intensificar los sabores.<br \/>Asar al carb\u00f3n o freir la gallina ya cocida puede darle un toque adicional de sabor a la comida.<br \/>El caldo se come caliente, pues conforme se enfr\u00eda, su sabor se reduce.<br \/>Se
